Gluten Free Pancakes {that are amazing!}






































 So this photo sucks, but these pancakes are awesome.

If you eat gluten free, you'll never buy a packet mix again. If you don't, you'll still love them because even Tom liked them {that is the GF tick of approval!}

Gluten Free Pancakes
Makes about 7-8

Ingredients:
1 cup gluten-free plain flour
1/3 cup almond meal
2 tsp GF baking powder
1 tbsp cornflour (or arrowroot flour)
2 tbs honey (or maple syrup, rapadura or coconut sugar)
1 cup almond milk
2 eggs
1 tbs coconut oil or olive oil (choose a light tasting variety though)
1 tsp vanilla

Method:
Add all the dry ingredients in a small mixing bowl and whisk to combine. Whisk together the wet ingredients in a separate bowl, then stir into the dry ingredients until just combined. If you have a few lumps smooth them out with a wooden spoon against the sides of the bowl. Let sit for about 10 minutes and it will let it get a bit airier.

I cook them in a very warm frying pan, with butter or ghee - using a 1/3 cup measure to scoop the mixture into the pan. Turn when bubbles start to form and pop.
