Today my dad would have been 59 years old. I miss him everyday, but especially on days like today. It was always so much fun spoiling and making a fuss of him.

QUINOA FLAKE GRANOLA
w/ Cranberry, Peach & Almonds

So, Granola with yoghurt and fruit is my most favourite breakfast. Since being gluten free I've missed it (so much!). I searched yesterday and found a recipe for granola using quinoa flakes which look a little oat-ey (if you squint ). So today I thought i'd give it a whirl. I'm kind of super impressed with myself because it's awesome and I ate two bowls. ( Because it tasted so good, not because I was impressed with myself ). Ingredients: 1/2 cup olive oil 1/2 cup maple syrup 3 cups quinoa flakes 1/2 cup chopped almonds 1/2 cup chopped dried peaches 1/2 cup dried cranberries 1/3 cup sunflower seeds ( You could do most other dried fruit & nuts if you like some others better ). What to do: Whisk oil and maple syrup stir in quinoa flakes. Bake in 180C oven, on baking paper until golden brown. Make sure you stir several times so the sides don't burn. When cool, mix in fruit & nuts. It should keep 2 weeks in air...

If I'm going to be truly honest, I'm a bit over it. Over reading about other peoples amazing pregnancies that happened after 2 whole seconds of trying to get pregnant or even better, just 'accidentally'. Over seeing someone else's beautiful squishy fat newborn and my arms suddenly feeling extremely empty. Over sharing how hard it is not having a body that works properly, mostly because I'm not sure how many people know how it really feels. And that's because I never imagined how this would feel until I got here myself. Over being disappointed again, and again, and again. Over worry if I'm being too honest, or sharing my issues with our infertility isn't right. Over thinking I'm not being positive enough. I kind of just want to retreat into my little world, with my husband and honestly, hide from the truth. Hide from how horrible it feels and hide my face when I don't feel like smiling. I was sad when I heard the news

Ok confession time.... {this is scary to post... just so you know} I was sad when I heard the announcement about the lowering of the age that young women can serve missions for our church. Not because I don't think it's wonderful. I think it's AMAZING! You see, when I was 19 I would have served a mission. By the time I was 21, I had just had my heart broken and felt like serving a mission would be mostly because I wasn't getting married. I felt, even after praying, it wasn't the time for me serve. About 6 months later I started dating someone and to keep it short, it wasn't a healthy relationship. It didn't take long for me to feel pretty rotten about myself, that I couldn't get anyone who treated me better, that I was pretty worthless actually. So when my Bishop spoke to me in his office one day and passed those white papers across his desk, I freaked out. I felt like God was giving me an escape. But when I told my boyfriend, he freaked out....
